I know I’ve been ignoring Chef’s Night Out, but I have a good excuse. I (along with some amazing staff and partners) have been working diligently to open Cotto Enoteca Pizzeria. I have been working like a beast, so blogging has definitely been put on the back burners. In fact, there’s quite a bit of stuff on the back burners; there literally has been no time for days off, decent sleep, dining out and quality time with family. Though unromantic, it’s the sacrifice we make to ensure a smooth operation.
After months of construction and preparation, weeks of training and a week of soft opening, we are at the tail end of week two. Things are going great; we’re busy, we’re well received and we’re getting great reviews. We’re still ironing out the small kinks, but overall, we’re exceptionally proud of our offering and I’m exceptionally proud of the hard work and dedication of the Cotto Enoteca staff. We’re not your average pizzeria; the simple, yet elegant food, the fantastic wine and beverage offering, the gorgeous room and the friendly understated service has been wow-ing guests and we’re so happy that our guests love what we do.
